Ingredients

  • 1 onion
  • pepper
  • salt
  • nutsmeg
  • oil
  • parsley
  • 1 pumpkin wedge
  • 1 carton of liquid crème fraîche

Instructions

Step 1

Cut the pumpkin flesh into large cubes.

Slice the onion and sauté it in a casserole dish with a little oil.

Add the diced squash to the casserole dish and cover with water (just to the level of the squash, no more). Boil for about 45 minutes to 1 hour.

Add the single cream, salt, pepper, and nutmeg to taste. Blend.

Step 5

When ready to serve, sprinkle with chopped parsley.
