Ingredients
- 340 g of sugar
- 1½ teaspoons vinegar (malt
- preferably)
- 1 1/2 cornstarch
- 25 g of icing sugar
- strawberries
- bananas
- 6 egg whites
- 25 cl of liquid cream
- raspberries
- grapes
- peaches

Step 1
Beat the egg whites until stiff. Gradually add the sugar. Beat again. Add the vinegar and cornstarch. Beat again. The mixture should be very stiff and glossy.

Place on a very, very lightly oiled baking sheet (better still, the French equivalent of 'non-stick baking paper'). It should be shaped into a fairly high circle (8 to 10 cm).

Bake in the oven at 130°C for 1 hour 15 minutes.

Allow to cool. Refrigerate. One hour before serving, whip the cream by adding the icing sugar, spread over the meringue, and arrange the fruit on top.
